300g beef tenderloin
salt & pepper
2tbs Dijon mustard
15g unsalted butter
200ml dessert wine
15g beef stock
1-2 clusters of mushrooms (or 300-400g of any mushroom you like)
1 clove of garlic
30-50g nuts
Prosciutto (enough to cover the meat)
Puff Pastry (enough to cover the meat)
1 egg yolk + 1tsp water

Pro-tip: Avoid rolling out puff-pastry as much as possible. *IF* you absolutely must roll it out / stretch it out, do so very very gently. The pre-cut store-bought stuff may allow for this a bit more easily, by the manufacturer doing some witchcraft with the butter used to form the layers. On the other hand, you may get away with murder by simply stretching the puff-pastry instead of rolling: flour on the board, tug at the perimeter of the dough, a little bit at a time, switching to opposite sides after each tug. Also, shame to simply wreck all those gorgeous mushrooms. Reserve some lightly chopped mix of shrooms for sauteing and use as a side *OR* saute, blend with some stock and turn it into some killer pan-sauce.
